Mehi\u0161ke specialitete celo v ZDA izpodrivajo legendarne hamburgerje.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Skrivnost uspeha? Je ni. Raznovrstnost, ustvarjalnost in prilagodljivost so vedno prina\u0161ale prednost. Mehi\u0161ka kuhinja je kuhinja prihodnosti.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Azteki in Maji<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ve\u010dina danes znanih mehi\u0161kih jedi izhaja iz obdobja velikih indijanskih civilizacij. Zgodovina pravi, da se je na obmo\u010dju dana\u0161nje Mehike \u017ee stoletja pred prihodom Evropejcev jedlo dobro in zdravo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Jedilnik s koruzo, fi\u017eolom, paradi\u017enikom, razli\u010dno zelenjavo, divja\u010dino in ribami je bil pestrej\u0161i od ve\u010dine evropejskih. Na jedilniku so prevladovale na\u0161im pala\u010dinkam podobne tortilje z razli\u010dnimi nadevi.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Konkvistadorji<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">\u0160panci so v 16. stoletju v Novi svet pripeljali p\u0161enico, \u010debulo, \u010desen, govedino, svinjino, mleko in mle\u010dne izdelke. Pripeljali so vojake in nalezljive bolezni, kar je uni\u010dilo cveto\u010de indijanske civilizacije. Kulinarika se je okrepila z desetinami novih vrs tortilj.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le sto let let kasneje se je obogatena mehi\u0161ka kuhinja raz\u0161irila \u0161e na jug dana\u0161njih ZDA, predvsem v Teksas, Arizono, Novo Mehiko in Kalifornijo, kjer so tamkaj\u0161nji staroselci vpeljali \u0161e nekaj novih sestavin.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Za ljubitelje fajit<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">\u010ce me\u0161anico za\u010dimb za fajito, v kateri so sol, poper, \u010dili (ali kajenski poper), sladkor in koriandrovi listi, prekuhamo v pivu ali belem vinu, dobimo odli\u010dno marinado za svinjino, pi\u0161\u010danca ali belo ribo, ki lahko slu\u017ei tudi kot omaka.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong><\/strong>Kavboji<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Meja med Mehiko in ZDA je bila nenehen vir kulinari\u010dnega navdiha. S severa so na jug pred roko pravice be\u017eali razli\u010dni kriminalci, z juga na sever reve\u017ei v upanju na debelej\u0161i kos kruha. \u0160e danes gre za eno najprometnej\u0161ih podro\u010dij, kar se ti\u010de nelegalnih prehodov. Nastale so nove tortilje. Tokrat predvsem iz p\u0161eni\u010dne moke, s pikantnimi omakami, pi\u0161\u010danci in sirom.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Danes, ko mehi\u0161ke restavracije najdemo povsod (mimogrede: strokovnjaki prisegajo, da pri avtenti\u010dni mehi\u0161ki kuhinji kuharji hrano pripravljajo pred publiko), lahko pri\u010dakujemo nove za\u010dimbe, nove vrste mesa in \u0161e kaj.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Zaklju\u010dek: tortilja na tortiljo = mehi\u0161ka kuhinja<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Narobe. Prostor nam ne dopu\u0161\u010da na\u0161teti vseh lepot mehi\u0161ke kuhinje. Pri tem nismo niti omenili sve\u017eega koriandra, ki daje nepogre\u0161ljivo sve\u017eino. Spregledali smo avokado in sloviti gvakamole.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Samo o salsah obstajajo debele knjige, \u010dilijev poznajo ve\u010d kot sto vrst, o oblikah tortilj so nastale resne strokovne razprave. Ste na primer vedeli, da imajo najve\u010dje kar meter premera, tehtajo pa tudi 70 kilogramov?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Na\u0161 namen je bil le za trohico raz\u0161iriti obzorja. Kdor i\u0161\u010de nekaj novega in se ne ustra\u0161i nekoliko pikantnej\u0161ih jedi, z mehi\u0161ko kuhinjo ne more zgre\u0161iti, pa naj bodo njegove najljub\u0161e tortilje sladke, mesne, zelenjavne ali polnjene z omako.
